Smoked mackerel and Ramsons Pate - the perfect light lunch

Quick, tasty and good for the mind, body and soul (it's even Slimming World friendly at only 2 syns for the whole lot)

Anyone who know me well knows I LOVE mackerel, much to the disgust of my partner who only like fish when its covered in batter and bought from the local chippy. Smoked mackerel is the best. It's cheap, it's good for your brain and it's very low on syns for those of you, who like me, have at some point joined Slimming World.


This lovely green pate only take a couple of minutes to make and will keep for a few days in the fridge. It's posh enough to be served as a starter when you've got people over and simple enough to be eaten with toast for lunch.


Smoked Mackerel and Ramsons Pate - Serves 4


Ingredients


1 pack of plain smoked mackerel (around 200g or 4 small fillets)

4 tablespoons of 0% creme fraiche


Squeeze of lemon


4 tbsp washed and roughly chopped ramsons (wild garlic)


Method


Remove the skins from the mackerel and break into chunks. Add to a bullet blender with the rest of the ingredients and pulse until you achieve the desired consistency. It's all a matter of preference. I don't like mine too smooth.


Serve with hot buttered toast (not SW friendly) or Ryvita.
